Standing Rib Roast

The king of beef roasts, the standing rib is a bone-in ribeye roast.  The fat in the ribeye helps keep it moist throughout the cooking process with rich, decadent results.  French the bones and it’ll look extra special in the middle of your table.

Pork & Wild Boar

Cider Glazed Kurobuta Ham

Ham’s a roast, it’s just cured and/or smoked first.  A blend of mustard, hard cider and red wine makes a delicious glaze.  Here we’ve served it with quick-pickled rhubarb to help cut its richness.  Recipe

Wild Boar Rack w/ Rosemary & Apple Mustard Sauce

We cooked this recipe sous vide, but you can roast it in the oven as you would a pork rack (just expect it to cook more quickly because wild boar is lean).  Apple and mustard are more traditional pork pairiings, but that’s the magic of wild boar: you can go in the pork direction or (as we have below) in a game meat direction – it works either way!

Truffle Honey Glazed Chicken

Air drying & the truffle honey glaze help make this chicken a beautiful golden/red brown when roasted with a nice crisp skin.  Delicious!
