CRANBERRY-SHIRAZ WILD BOAR SAUSAGES WITH SWEET POTATOES & APPLES

This rustic dish might be simple to put together, but the resulting combination of sweet and savory flavors is quite complex. It is perfect to serve on a cold autumn or winter evening.
INGREDIENTS
- 4 Wild Boar Sausages with Cranberries & Shiraz
- J1 large sweet potato, sliced in 1/2 inch chunks
- 1 large apple, sliced in 1/2-inch chunks
- 1/2 red onion, sliced
- 1/4 cup bourbon
- 1 tablespoon maple syrup
- 1 teaspoon dried thyme
- Salt, pepper to taste
- 3-4 Fresh Sage Leaves, chopped
DIRECTIONS

In a casserole dish, place sweet potato and apple chunks, and red onion slices. Sprinkle with salt and pepper to taste and mix well. Arrange the wild boar sausages on top.

In a bowl, combine bourbon, maple syrup, and dried thyme and pour all over the sausages, sweet potatoes, and apples.

Bake at 425°F. for about 50 minutes to an hour, until the sweet potatoes are tender.

After removing from the oven, sprinkle with sage, and serve.
