How to Cool Down Dried Peppers

If the dried peppers that you have on hand are spicier than you’d like, here’s a tip that may be helpful:

Remove the Seeds & Stems to Cool Down Peppers:
A lot of the capsaicin (the compound that makes peppers spicy) in hot peppers is located in the seeds and the inner support ribs.  Neither of these parts is particularly tasty anyway, so the only thing you’ll lose by removing them is time, but the result will be a significantly cooler pepper.  So, reconstitute the chilies and then scrape the seeds and ribs (despite the photo below, we HIGHLY recommend using gloves when handling chilies.

Will this make a Ghost Pepper as mild as a Mulato Pepper?  Certainly not…but it will cool it down.
