Wild Lingonberry & Orange Relish
Makes 6-8 Servings
Lingonberries are close European/Scandinavian cousins to the American cranberry, but are smaller with a more complex flavor (though still plenty of zing). This apple, orange & lingonberry relish lets them shine and is a great way to cut the richness of a traditional Thanksgiving or Christmas dinner.

INGREDIENTS
- 2 Tart Apples (such as Granny Smith)
- 2 Oranges
- Honey to Taste (1/4 cup or more)
- 21oz (1 ½ jars) Wild Lingonberry Sauce
- Zest of 1 Lemon
- Pinch of Salt
DIRECTIONS

Peel the apples, core them & cut them into large chunks.

Grate the zest from the oranges, then peel them and cut the fruit into large chunks.

Put all ingredients in a food processer & process until the fruit is chopped. You may have to do this in two batches. Taste & adjust honey.

Put the mixture in a bowl and refrigerate it overnight to let the flavors meld.
