Minced Kobe Beef Taco

We’ve used minced beef rather than ground beef in these tacos for a different texture, and Kobe beef for a more intense beefy flavor. Add to that pronounced heat from the pimenton and jalapeno, crisp sour bite from the pickles, and fresh guacamole to cool things down, and you’ve got a real treat.
INGREDIENTS
- 1lb Kobe Beef (sirloin, tenderloin, skirt or hanger)
- 1 tsp Cumin
- 1 tsp Pimenton
- 1 tsp Black Pepper
- 3 tsp Salt
- 1 Red Jalapeno
- Corn Tortillas
- Plus:
- Pickled Radishes and/or Pickled Carrots (how to pickle at home) and Guacamole, either your favorite version or using our homemade guacamole recipe.
DIRECTIONS

Finely chop the beef, and blend it with the cumin, pimenton, black pepper, and salt.

Thinly slice the red jalapeno and sauté it in oil until softened. Remove it from the pan and add the beef.

Brown the beef.

Build each taco with beef, jalapeno, and the pickles of your choice.

Serve with guacamole on the side.
