Natasha over at Five Star Foodie has just published a great post on one of my favorite subjects: sweeteners! You’d be surprised how many varieties of sweeteners/sugars there are in the world, and each of them tastes, feels, and bakes a bit differently. In her post Vanilla Bean Muffins with Four Sugar Toppings, she explores four of the more unusual sugar varieties, and does an excellent job of describing the differences between each one. She even provides a recipe for the tasty muffins she used as a base.
I’m particularly impressed that she was gutsy enough to top muffins with the coconut sugar sample we sent her. I love the stuff as an ingredient (fabulous in Thai black rice pudding!), but it has such a rich, musky flavor that I’ve been afraid to experiment with it as a topping for fear of overwhelming things. Now I’ve just got to try it!
