Duck Fat Fried Potatoes
Duck fat + potatoes = awesome…what else is there to say?
INGREDIENTS
- 5 Heirloom Potatoes, cubed
- 1 cup Rendered Duck Fat
- 2 Bay Leaves
- 2 large sprigs of Fresh Thyme
- ¼ cup White Wine or Distilled Vinegar
- 6 cups of Water, heavily salted
- Salt to Taste
DIRECTIONS

In a large pot combine the salted water and vinegar. Add the potatoes. Bring the water to a simmer, and simmer until the potatoes are tender.

Melt the duck fat in a large frying pan over medium to medium-high heat & drain the potatoes. Add the potatoes, bay leaves & sprigs of thyme to the melted duck fat.

Fry, stirring occasionally, until the potatoes are golden brown.

Remove the herbs, add salt to taste, and serve.
