Crab “Deviled” Eggs
Makes 4 Servings
- ½ cup Dungeness Crab Meat (could substitute other crab)
- 8 Eggs
- ½ cup Sour Cream
- 2 tbsp Minced Onion
- 1 tbsp minced Brined Capers
- 1 tsp Salt
- Cook the Eggs:
Put the eggs in a pot with water. Bring the water to a boil, then gently boil the eggs for 12 minutes.
Remove the eggs from the pot and immediately put them in ice water.
Gently peel the eggs. Slice them in half lengthwise & scoop out the yolks.
Mix the yolks with the sour cream, onion, capers, salt and crab meat.
Mound the yolk mixture in the egg whites.
