Apricot & Mustard Glazed Salmon
Makes 4-6 Servings
A healthy, delicious, incredibly easy one-pan dinner that’s ready in 15 minutes. Just serve as-is or make a starch of choice separately. Week night suppers never had it so good.
INGREDIENTS
- Two 6 oz Salmon Fillet Portions (we used Pink Salmon)
- 1/3 cup Apricot Jam
- 1 tbsp Dijon Mustard
- 1 clove of Garlic
- 1 lb Asparagus
- 1 tbsp Olive Oil
- Salt
- Cracked Black Pepper
DIRECTIONS

Preheat your oven to 375˚F.

Cut the stem ends off of the asparagus spears. Toss the spears with the olive oil, 1/2tsp of salt, and pepper.

In a small bowl mix together the jam & mustard.

Mince the garlic with ½ tsp of salt, scraping it into a fine paste. Mix the garlic mixture with the jam and mustard.

Oil a baking pan. Spread the asparagus spears out on the pan in a single layer.

Pat the salmon fillet portions dry.

Spread the jam glaze over the top of the salmon.

Place the salmon next to the asparagus, and roast in the oven until the salmon is cooked through (about 8 minutes). Serve.
