Extra Tangy Tomato Jam

Makes 2 cups

Sweet, tangy & fruity, this chunky tomato condiment is cooked down to a jam-like consistency.  It’s delicious on burgers & sandwiches.  This is a tangier version than the tomato-sauce-like recipe here.

INGREDIENTS
  • 2 tbsp Extra Virgin Olive Oi
  • ½ Red Onion, small diced
  • 1 tsp Dried Wild Italian Oregano
  • 1 tbsp Fresh Rosemary Leaves, very finely minced
  • 3 tbsp Granulated Piloncillo Sugar
  • 1 tsp Ground Coriander
  • 14oz can Fire-Roasted Diced Tomatoes
  • ½ cup Red Wine Vinegar
  • 1 tsp Orange Zest
  • 1 tbsp Orange Juice
  • Optional:
  • 1 tsp minced Garlic
  • Salt & Pepper to Taste

DIRECTIONS

Combine the oregano, rosemary, coriander & onion into a pot or wide pan with the olive oil.

Sprinkle the sugar over the onions. Saute the onions over medium-low heat for 10-15 minutes, until well caramelized.

Add the tomatoes (with their juice), garlic (if desired), red wine vinegar, orange zest and orange juice to the pan.

Stew the tomatoes over medium-high heat for about 15 minutes, until most of the liquid has evaporated and the mixture has cooked down to a jam-like consistency.

Add salt & pepper to taste.
