Whipped bone marrow spread in a white ramekin, with crostini and shaved red onions.
INGREDIENTS
    • 1 lb bone marrow pieces, thawed
    • 2 tsp olive oil
    • 2 sprigs thyme
    • 2 tsp minced garlic
    • 2 tsp kosher salt
    • 2 tsp cracked black pepper
    • 2 tsp red wine vinegar
    • Crostini or toast points
    • Pickled vegetables

    DIRECTIONS

    1

    Preheat the oven to 400°F.

    2

Toss bone marrow pieces with thyme, garlic, olive oil, salt, and pepper. Spread on a sheet pan with a lip or edges and roast for 12-14 minutes, until about half the marrow has rendered and the rest is very soft.

    3

Transfer marrow to a blender or food processor. Add vinegar and mix until very smooth. Taste and adjust salt, if needed. Transfer to a serving bowl or other container. Chill covered for at least 2-3 hours or overnight. Serve with crostini or toast points and pickled vegetables.
