Quick Pickled Onions with Vanilla
Quick pickles are a great chef’s trick to have in your culinary repertoire – their bite and vibrant crunch are great addition to sandwiches, a good way to cut the richness of roasted or braised meats or soups, and really take hors d’oeuvres to the next level.
We’ve covered them before (How to Quick Pickle), but the vanilla flavor in these onions makes them a bit unusual, so we’ve given them a post of their own.
INGREDIENTS
- 1 Yellow Onion, sliced thinly enough to be translucent
- ½ cup Red Wine Vinegar
- 1/3 cup Sugar
- 1 splash Vanilla Extract
- 1 tsp Kosher Salt
DIRECTIONS

In a small pot combine the vinegar, sugar, vanilla and salt.

Heat the mixture just until the sugar and salt dissolve.

Pour the pickling liquid over the sliced onions and let them sit for a few hours, until it has cooled.

Use in a dish right away or store in your refrigerator until you need them.
