Simple, humble in appearance yet glorious in flavor…this is the quintessential Moroccan sandwich. Imagine a much more flavorful tuna fish sandwich – bright, creamy, with a nice warming heat that’s not too spicy. Now imagine that it’s only a tiny bit more work, yet better for you than one made with mayo!
INGREDIENTS
- 3 tbsp Harissa
- 15oz Canned Tuna, not drained
- 2 tbsp Fresh Flat Leaf Parsley, minced
- ½ Red Onion, diced
- 4 tbsp Extra Virgin Olive Oil
- 1 Tomato, sliced
- 1 Thin Baguette
- Optional:
- Capers or Black Olives to Taste
DIRECTIONS

Mix together the tuna (with the liquid from the cans), harissa, parsley, red onion, olive oil & tomato.

Cut the baguette into two halves.

Fill the sandwich with the tuna mixture & serve.
