Saffron Mayonnaise
Saffron gives this homemade mayonnaise recipe a beautiful yellow color with streaks of red (the saffron threads).

INGREDIENTS
- 2 Egg Yolks
- 2 tbsp Apple Cider Vinegar
- ¼ tsp Dijon Mustard
- 1/4 tsp Saffron Threads
- ¼ tsp Granulated Piloncillo (could substitute brown sugar)
- Heaping ¼ tsp Salt
- 1 cup Neutral Flavored Oil (grapeseed, canola, rice bran, etc)
DIRECTIONS

Bloom the saffron threads in 1 tsp hot water for five minutes (how to use saffron).

Whisk together the egg yolks with the apple cider vinegar, Dijon, piloncillo & salt.

Continue to whisk, slowly drizzling in the oil, until a smooth emulsion forms.
