My name is Hannah and I write a monthly feature called 5 Star Foodie Junior on my mom’s blog 5 Star Foodie Culinary Adventures. My mom and I usually make different savory or sweet dishes and I write about how we made them. I have a lot of fun learning how to cook and helping my mom create cool new recipes.
Recently, Justin sent me some really delicious dried fruits: Rainier Cherries, Mulberries, Medjool Dates, Blueberries, and Red Dried Plums. We made several yummy treats with them like Homemade Granola with dried blueberries, mulberries, and dates, and Blondies with dried plums.
Today, I will tell you about another treat that we made, Dried Rainier Cherries Chocolate Chip Granola Bars.
First, I mixed oats, brown sugar, wheat germ, cinnamon, whole wheat flour, chocolate chips, dried Rainier cherries, and salt.
Then we mixed in honey, eggs, oil, and almond extract.
We put this mixture in a baking pan and baked it in the oven. Mommy cut the rectangles to make granola bars.
We made the granola bars in the evening, and the next morning we had them for breakfast. I really liked the combination of cherries and chocolate, and I also liked the hint of almond flavor in these delicious granola bars.
Ingredients:
1 1/2 cup oats
1/2 cup brown sugar
1/2 cup wheat germ
1 teaspoon cinnamon
2/3 cup whole wheat flour
1/2 cup chocolate chips
1/2 cup dried Rainer cherries
1/2 teaspoon salt
1/3 cup honey
1 large egg white (3 tablespoons)
1/3 cup oil
1 teaspoon almond extract
Directions:
In a large bowl, combine oats, brown sugar, wheat germ, cinnamon, whole wheat flour, chocolate chips, dried Rainier cherries, and salt. In a separate bowl, whisk honey, eggs, oil, and almond extract together. Mix the honey-oil-egg mixture into the dry ingredients gently until well combined. Place into a parchment paper-lined and greased 8 x 8-inch baking pan, spreading evenly. Bake in the oven on 350 degrees for about 25 minutes. Cool for 5-10 minutes then cut into bars.

I love chocolate and cherry together so this definitely sounds like a winner to me. Definitely much more delicious than the store bought granola bars I ate when I was a kid.
