Beetle Larvae & Parmesan Crisps
An easy and rather elegant way to get people to eat bugs.
INGREDIENTS
- 1 cup Grated Parmigiano Reggiano Cheese
- 1/4 cup Beetle Larvae

Preheat your oven to 350° F.

Grate the parmesan cheese finely with a fine grater or microplane.

Sprinkle each serving of the parmesan cheese on a silicone baking sheet in three round piles (you may have to work in batches).
If you’d like to display the beetle larvae prominently, spread out your parmesan rounds and top each with a dozen or so larvae. If you’d like to add protein but could do without the visual impact of the insects, you can achieve a rather subtler effect by grouping the larvae on the silpat first and then spreading your parmesan on top of them.

Bake for 20 minutes, until golden brown and crispy.

Serve on salads, cheese plates, pasta dishes – anywhere the bold flavor of parmesan and a nudge of protein would be welcome.
