We recently sent samples to a group of food bloggers to get their input. Below is a roundup of their thoughts, as well as links to their reviews and the clever recipes they came up with.
Flavor Impressions and Dish Suggestions:
The flavors of these juices are very complicated and difficult to put into words. Below is a gathering of the various terms bloggers and their taste testers used to describe them. As you can see, impressions varied widely.
We’ve also included lists of some of the possible uses bloggers suggested for each juice. Cocktails were a common suggestion for all three, as were desserts, vinaigrettes and marinades.
Yuzu Juice |
Tasters listed almost every citrus flavor from a sweet orange to grapefruit to a tart lime, and were impressed by the complexity and harmoniously layered nature of yuzu’s flavor. There’s a reason why this one’s the chef favorite. In addition to citrus, several tasters picked up floral notes and a couple even picked up a piney/juniper berry aspect.
Suggested Dishes – cake, pastry glaze, ice cream, recipes containing rosemary, spicy sauces, Thai food, on fruit with mint or basil, avocado & tomato salad with extra virgin olive oil, bath salts.
Sudachi Juice |
Tasters described sudachi as tart-yet creamy, and mentioned Meyer lemon and lime as similar citrus flavors. Beyond the primary citrus taste, it had notes that were described as herby like parsley or lemongrass with a hint of pepper or ginger in the aroma.
Suggested Dishes – Ceviche, salad dressings for bitter/peppery greens, hummus, with rich proteins, shrimp, coconut/coconut milk, pineapple or ginger.
Kabosu Juice |
Kabosu’s primary citrus flavors were described by our tasters as orange, lemon, lime with an herbaceous accent evoking basil and a melon/cantaloupe finish.
Suggested Dishes – Ice cream, mint iced tea, flan, rice pudding, in savory rice dishes, over mango with black sesame seeds.
