Chicken Fruit Salad with Fresh Truffles

Makes 4 Appetizer Servings

This gourmet chicken salad features a colorful, healthy, and delicious combination of white grapes, avocados, and persimmons. Dressed with truffle vinaigrette and topped with thinly shaved fresh truffles, it is an amazing appetizer or a light meal.

INGREDIENTS
  • Vinaigrette:
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons White Wine Vinegar
  • 1- 1 1/2 tablespoons thinly shaved Fresh Truffles
  • Salt to taste
  • Salad:
  • 3 boneless, skinless Chicken Thighs
  • 2/3 cup White Grapes, quartered
  • 2/3 cup Fuyu Persimmon, chopped
  • 2/3 cup Avocado, chopped
  • Shaved Truffles, for topping

DIRECTIONS

Poach (simmer) the chicken thighs in water or chicken stock for 8-10 minutes, then drain & chop them.

Whisk together the oil and vinegar, gently mix in the truffles and season with salt to taste. Set aside for at least 30 minutes for flavors to develop. Whisk again just before dressing the salad.

White Truffle Vinaigrette

Mix together the chicken, grapes, persimmon, and avocado in a bowl. Drizzle in the truffle vinaigrette & stir.

Divide the salad between plates, and top with a generous portion of shaved truffles.
