Savory Clafoutis with Roasted Red Peppers, Caramelized Onions, and Wild Boar Sausage

Clafoutis is a classic sweet brunch or breakfast French dish, typically made with cherries or other fruits. A savory clafoutis is a fun twist on the classic version, and is similar to a quiche, great to serve for either breakfast, lunch, or a light dinner. This clafoutis features wild boar sausage which is incredibly flavorful and delicious.

Ingredients:

Olive oil
1 Red Pepper, quartered and cleaned
1/2 cup Onion, chopped
2 Wild Boar Sausages with Roasted Garlic & Marsala
2 tablespoons Tapioca Starch
1 cup Milk
1 cup Cream
3 Eggs
Salt & Pepper to taste
1 cup Gruyere Cheese, shredded
About 2 tablespoons Fresh Chives, chopped

Directions:

1. Arrange red pepper quarters on a baking rack lined with foil, sprinkle with a little bit of olive oil. Broil for about 5 minutes or until the skin is blackened. Cool, remove the skin and chop.

2. Heat a tablespoon of olive oil in a skillet. Add onions and fry for a few minutes until the onions are starting to turn golden.

3. Add another tablespoon of oil to the same skillet. Fry sausages until browned on all sides, turning often, for about 4-5 minutes. Slice into thin rounds.

4. In a large bowl, add tapioca starch and slowly pour 1/4 cup of milk, whisking until the mixture is smooth. Pour the rest of the milk and cream while whisking. Then whisk in the eggs. Season with salt and pepper to taste.

5. In a well-greased baking dish (8-inch cake pan or a casserole), arrange sausage rounds, peppers, and onions. Sprinkle with Gruyere cheese and chives. Then, pour the batter over slowly.

6. Bake in a 375°F preheated oven for 30-40 minutes or until the top is puffy and golden brown.
