Quail Soup

Makes 4 Servings
 
 
INGREDIENTS
  • 8 pieces of quail
  • 4 quarts of water
  • 3 carrots cut into pieces
  • 2 celery stalks, cut into pieces
  • 1 bunch of parsley
  • 1 small celery root
  • 1 large potato
  • 1 large parsnip
  • 2 small cauliflower pieces (add this in the last 20 minutes of cooking time)
  • ½ Kohlrabi
  • 1 bell pepper
  • 1 medium onion
  • 4 medium cloves of garlic
  • 20 peppercorns
  • 1.5 tablespoon of salt

DIRECTIONS

Add 4 quarts of water and the quails and slowly bring it to boil on medium heat. It should be about 20-30 minutes.

Remove foam from the surface again.

Add peppercorns, vegetables (except for cauliflower which is added in the last 20 minutes), and cook for another 45 minutes.
