Fennel Aquavit Punch
This refreshing punch is fruity and creamy (thanks to the orgeat), given complexity by a fascinating blend of aromatics from the mint, aquavit and fennel pollen syrup.
Garnish: Mint Spring
- Combine the mint, aquavit, orgeat, syrup & juices in a mixing glass. Gently press the mint with a muddler. Don’t bash it. You’re just trying to extract the natural oils
- Shake the contents of the mixing glass with ice until well chilled.
- Strain the cocktail into a tall glass over fresh ice (ideally crushed or par-crushed).
- Top with additional crushed ice & garnish with the mint sprig. Serve.
