Salsa Verde

Salsa verde is a dark green herb sauce, often made with boquerones, which add a fishy tang. In this recipe we’ve left the boquerones out to create a vegetarian salsa verde (check out our Japan-inspired tacos recipe for a version with the fish).

You can use a variety of different herbs to make salsa verde, the below is just one version.

Ingredients:
1 bunch Parsley
10 sprigs Fresh Thyme
4 fresh Sage leaves
2 tbsp Fresh Herb of your choice (Mint, Lemon Thyme, etc –  any accent flavor that suits your meat or fish)
1 large clove of Garlic
Olive Oil

Directions:
1. Wash the herbs, and add them to your blender.

2. Peel and lightly sweat the garlic clove or sauté until slightly browned.

3. Add the garlic clove to the herbs along with just enough olive oil to give the blender enough liquid to work with.

4. Blend until smooth.
