Saffron Mayonnaise

Saffron gives this homemade mayonnaise recipe a beautiful yellow color with streaks of red (the saffron threads).

Saffron Mayonnaise
INGREDIENTS
  • 2 Egg Yolks
  • 2 tbsp Apple Cider Vinegar
  • ¼ tsp Dijon Mustard
  • 1/4 tsp Saffron Threads
  • ¼ tsp Granulated Piloncillo (could substitute brown sugar)
  • Heaping ¼ tsp Salt
  • 1 cup Neutral Flavored Oil (grapeseed, canola, rice bran, etc)

DIRECTIONS

1

Bloom the saffron threads in 1 tsp hot water for five minutes (how to use saffron).
2

Whisk together the egg yolks with the apple cider vinegar, Dijon, piloncillo & salt.
3

Continue to whisk, slowly drizzling in the oil, until a smooth emulsion forms.
