What Makes Molded Ice Cream Special
Molded ice creams were a dying art before St. Clair ice cream revived them. Classic wedding desserts like ice cream strawberries had almost gone the culinary way of the dodo, as only a few purveyors of these elegant treats (that predate the Victorian era) survived the Great Depression and the subsequent meteoric rise of manufactured convenience food.
Fortunately for America’s ice cream fans, the founders of St. Clair went to a small molded ice cream shop in Toronto, Canada and begged them to pass on the secrets of their art. Today the company makes a variety of hand molded, hand glazed desserts.
These small molded ice cream pears, ice cream walnuts, and other ice cream fruits are available in bulk, making them a perfect wedding dessert. They all come with tiny green toothpicks attached, allowing guests to eat them without spoons, bowls, or any other utensils, so they work well for platter service or as a dessert for cocktail parties. Kosher sorbet flavors are also available, for those looking for a lighter choice.

There are servers on the sidelines with night vision -handling people back into their seats. Another crew is setting fine dishes of the ice cream with champagne while red curtains are being dropped along the walls.
A match lights in the middle of the room which, after a few seconds of hushed silence, is joined all around the rest of the room at candles at all the tables. The music rises with a little bit of the lighting to telegraph that it was all staged.
