Simple, Easy & Delicious

	Zucchini Ribbons with Wild Mushrooms A fun to eat light side dish or vegetable course – essentially a simple pasta dish with thin strips of zucchini playing the pasta.

A Little More Complicated (But Still Pretty Easy)

	Chanterelle & Farro Salad Recipe Chanterelles, fennel bulb, roasted beets, seabeans (optional), shallots and farro in a vinegar dressing. A great side dish or vegetarian entrée for the summer.

	Parsnip Agnolotti with Lobster & Chanterelle Mushrooms Silky homemade pasta stuffed with parsnip puree in a lobster sauce with chanterelle mushrooms. Decadent doesn’t begin to describe it.
	Chanterelle & Kobe Beef Stew Recipe Kobe beef stewed in beef stock, red wine & brandy served over polenta and topped with caramelized chanterelles and glazed pearl onions. Sure, it’s a bit complicated as stew recipes go…but it’s worth it.
	Lobster Mushroom Stuffed Veal Chops Veal rib chops stuffed with sautéed mushrooms and wrapped in dry-cured ham or prosciutto. Elegant & delicious!
