We don&#039;t see any reason why the oven-braise in the above recipe (steps 7 &amp;8) couldn&#039;t be replaced with a trip to the crock pot, but to be honest we don&#039;t use them often enough to give you any tips beyond this: don&#039;t shortcut steps 2-6.  

You can easily do the initial browning, caramelizing and deglazing in a large, deep frying pan rather than the dutch oven, then move the veggies, meat, and deglazed goodness (fond) from the pan to your crock pot.  Trust us, it&#039;s worth the extra effort and dishes.  What you&#039;re doing is building the foundation flavors of the braise.  If you skip them, you&#039;ll be missing out!
