8 Year-old Epicure discusses Oyster Flavor Profiles

Here’s an e-mail from 8-year-old Will who won our Oyster Giveaway back in October. Will is our new hero…not only can Will open an oyster, but he counts kimchee and his Papa’s “green pasta” which includes anchovies as his favorite foods! At his age, all we could think about was fruit loops and mac & cheese. Go, Will, Go! And, if you are ever in Seattle, we’d love to take you out to lunch:

Emily & Justin,
Thank you for the oysters.  I really liked them.  I got to eat a lot of them raw and they were so yummy.  My Dad also taught me how to open them and it was very fun.

The four kinds you sent were all different.  Some were big and some were small.  Some still had the barnacles on them.  That was cool. My dad cooked the ones that we didn’t eat raw.  He made a dish with oysters, crab, scampi, bread crumbs, garlic, butter and some sour cream and I got to help him.  It was very good.  We used the cool paper plates that you gave us that look like the inside of a tree. 


 
Here is my description about how they tasted:
 
Virginica – These were hard to open but they were sweet.  They tasted a little bit like there was some cucumber in them.
 
Olympia – These tasted like the sourness of the sea.  I know that sounds funny but they were really good and salty.
 
Kumamoto – These were salty and had very pretty shells.  They had kind of a nutty taste.
 
Pacific – These were really big and yummy.  They did not have the strong sea taste like the Olympia kind.
